2 large eggs

1/3 cup melted butter or oil

2/3 cup brown sugar (can reduce to 1/2 cup)

1 tsp vanilla extract

1 1/2 cups gluten free 1:1 flour blend (with xanthan gum)

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon (optional)

1/2 cup chopped walnuts or chocolate chips (optional)


Instructions

1. Preheat oven to 350°F. Grease a 9×5 loaf pan or line with parchment paper.

2. Mash bananas in a large bowl. Add eggs, melted butter, sugar, and vanilla. Mix well.

3. In a separate bowl, whisk together gluten-free flour, baking soda, salt, and cinnamon.

4. Gently stir dry ingredients into wet ingredients until just combined. Do not overmix.
