Ingredients
1 cup gluten-free flour blend (with xanthan gum)
1 cup cottage cheese (full-fat or low-fat)
1 tbsp baking powder
1 large egg (plus 1 extra for egg wash)
1/2 tsp salt
Optional toppings: sesame seeds, poppy seeds, Everything seasoning
Instructions
1. Preheat oven to 375°F. Line a baking tray with parchment paper.
2. Combine gluten-free flour, baking powder, and salt in a bowl.
3. Add cottage cheese and beaten egg; mix until soft dough forms.
4. Divide dough and shape into bagel rings with wet hands.
5. Brush with egg wash, add toppings, and bake for 25–30 minutes until golden.
