Description
A cozy gluten and dairy-free chickpea coconut curry with rice—comforting, simple, and full of flavor.
Ingredients
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 tbsp ginger, grated
1 can chickpeas, drained
1 can coconut milk
2 tbsp tomato paste
1 tsp turmeric
1 tsp cumin
Salt to taste
Cooked rice to serve
Fresh cilantro for garnish
Instructions
1. Heat olive oil in a pan over medium heat.
2. Add diced onion and sauté until translucent.
3. Add garlic and ginger, cook for 1 minute.
4. Stir in tomato paste, turmeric, and cumin.
5. Add chickpeas and coconut milk, simmer for 15 minutes.
6. Season with salt.
7. Serve hot over rice, garnished with cilantro.
Notes
You can swap chickpeas with lentils or tofu. This recipe freezes well.
