Ingredients
1 cup rice flour
½ cup tapioca starch
1 tbsp olive oil
1 tsp baking powder
½ tsp salt
¾ cup warm water
Instructions
1. Combine dry ingredients in a large bowl.
2. Add olive oil and warm water gradually, stirring to form a soft dough.
3. Divide the dough into 4–6 balls. Roll each into a ¼-inch thick round.
4. Heat a non-stick skillet over medium heat. Cook each pita for 2–3 minutes per side until puffed and golden.
Notes
For a crispier texture, bake the pitas in a hot oven at 450°F for 5–7 minutes.
Store leftovers in an airtight container and reheat as needed.
